Then, serve it with a parsley-and-basil based chimichurri for Argentinian-inspired finish. Never had chimichurri? It's a bright, herby sauce literally made for steak, and it makes this dish. Enjoy with a side of roasted fingerling potatoes, mushrooms, and caramelized onions, then add sweet marinated red peppers as a little bonus brightness. (We like to use the peppers as a relish.)
